Bitter yet sweet

Bomal

Bomal (sea conch) is wonderful food material that is easily available to Jeju people. Bomal is spread widely on the shore of Jeju. Only recently, noodle or porridge with Bomal became famous must-eat eatery in Jeju, but Bomal has already been a wonderful snack for Jeju people. They sometimes finished the day by boiling freshly caught Bomal and taking it out of the shells to eat. Bomal is also a wonderful food material, making a good and sufficient meal as porridge or soup, and when it is broiled with soy sauce, it played the role of a wonderful side dish. Bomal has a soft texture, lightly sweet, and has a delicious taste, so you never get fed up. Also, it is good for a hangover, and it is known to protect the liver and stomach, especially good for hangover soup, and it is known to have an effect on the prevention and treatment of osteoporosis.

 

Bomal soup

The most representative Bomal food is Bomal soup. Squeeze out the soup from Bomal, lightly broil it in sesame oil, and boil with seaweed. Adjust the taste of the soup with soy sauce, and the roasted and light taste is like the profound taste of the sea of Jeju. Boiled Bomal porridge including the intestines of Bomal is also tasty. Bomal Noodle

Bomal has many types. The names and tastes are different according to the region where they are caught and the shapes, such as Suduri Bomal, Maeongi, Gomegi, etc. Maeongi has a deep bitter taste, and Gomegi is a little sweet. Suduri Bomal is called the queen of Bomal, and has the best taste among Bomals. Bomal noodles are made with the Suduri Bomal. Bomal noodles with the little bitter and delicious taste unique to Bomal will make your chopsticks busy with the unique light and heavy soup taste.

A unique chewy texture

Abalone

Abalone, sea urchin, spiny turban shell, crab, etc. that grow in the rocky crevices or the shallow sea of Jeju are distinctly different from those of dryland regions in taste, shape and texture. Without doubt, it means greater quality than the ingredients out there. Among the various types of seafood, abalone is the most popular dish in Jeju. Abalone from Jeju grows slower than the cultured abalone (Haliotis discus hannai) which is relatively common, and is exceptionally strong as they withstand the rough waves. That’s why abalone has a slightly harder and chewy texture. Abalone was also precious in old Korea. Haenyeo, or Korean female divers even risked their lives to offer it as a tribute to the King. A Story of the Female Diver, Jamnyeoseol, written by Kim Chuntaek, a writer during Sukjong’s time of the Joseon Dynasty says, “If a female diver finds abalone on the rock, they will mark the location by placing an empty shell upside down, and return to the surface of the water

 

Abalone Cold Sashimi Soup (or Mulhoe)

In addition to Jari or damselfish, spiny turban shell or abalone is also used as fish ingredients for Mulhoe in Jeju. Mulhoe in Jeju is especially unique due to its preparation with soybean paste rather than red-pepper paste. It may be because Jeju Island has continued soybean farming for a long time. Of course, Abalone Mulhoe is best for summer or fall delicacies. You should not miss Jeju Abalone Mulhoe made of big slices of abalone with the seasoning of soybean paste that tastes a little bit spicy, but is also refreshing too.

 

Abalone Stone Pot Rice (or Dolsot Bap)

Abalone is grilled or prepared as sashimi, but rice cooked in a stone pot with slices of abalone on top is certainly one of the must try foods in Jeju. Thin slices of fresh abalone are added on the top of rice, with the abalone intestines removed from the shell. If you open the stone lid, you will be pleasantly surprised with the savory smell of Dolsot Bap. Local people usually put a bowl of abalone rice, add margarine and specially-made seasoning, and mix everything together. Another flavor of fresh abalone with a soft texture will give you an unforgettable experience.
